Preheat the grill to medium-high heat.
Rub the salmon fillets with oil and season to taste.
2 salmon fillets, Sea salt and freshly ground black pepper, 1 tbsp. avocado oil
In a bowl, combine all the ingredients for the avocado dressing, season to taste, and stir until creamy.
1 ripe avocado, ¼ cup red wine vinegar, ¼ cup olive oil, 1 garlic clove, 2 tbsp. chives, Sea salt and freshly ground black pepper
Add the salmon to the grill and cook for 3 to 4 minutes per side or until desired doneness, then set aside.
On two plates, add the arugula, tomatoes, and bacon.
4 cups baby arugula or mixed greens, 1 cup cherry tomatoes, 3 thick-cut slices of bacon
Cut salmon into bite-sized pieces.
Add salmon to the salad and serve with the creamy avocado dressing.
