Preheat oven to 425 F.
In a bowl, combine the ketchup, chicken stock, garlic, apple cider vinegar, and coconut aminos.
2 tbsp. homemade ketchup, ¼ cup chicken stock, 2 garlic cloves, 2 tsp. apple cider vinegar, 2 tbsp. coconut aminos
Season the pork chops to taste with salt and pepper.
4 pork chops, Sea salt and freshly ground black pepper
Pour the mixture over the pork chops, making sure they are well covered.
Drizzle the avocado oil over the sweet potatoes and broccoli, and season to taste.
2 sweet potatoes, 2 cups broccoli florets, 2 tbsp. avocado oil, Sea salt and freshly ground black pepper
Place the pork chops in a baking dish and surround it with the sweet potatoes and broccoli.
Bake in the oven for about 20-25 minutes, depending on the thickness, or until the pork is cooked through and the sweet potatoes are soft. Pork is done when the temperature reaches 145 F.
