Garlic-Butter Spinach-Stuffed Mushrooms Recipe

There is no better way to eat mushrooms than to stuff them. Fill them with spinach, garlic, butter, and a squeeze of lime - dinner will be ready in no time.

  • Preheat oven to 390 F.
  • In a large pan, melt the butter with the garlic and sauté for a few seconds.
    2 tbsp. grass-fed butter or ghee, 3-4 garlic cloves
  • Add the spinach and allow it to wilt.
    6 cups spinach
  • Add the lime juice and season to taste.
    A squeeze of lime juice
  • Place the mushrooms in an oven-proof dish and season with salt and pepper.
    4 large brown mushrooms, Salt and pepper to taste
  • Add a generous spoonful of the spinach mixture to each mushroom and top with the pine nuts.
    2-3 tbsp. pine nuts
  • Place in the oven and bake for 15-20 minutes until the mushrooms are cooked through and the pine nuts are golden.
  • Serve immediately.
