Pork Loin With Pesto Sauce Recipe

  • Preheat oven to 375 F.
  • In a bowl, combine the olive oil, garlic, rosemary, and thyme; season to taste.
    4 garlic cloves, 2 tbsp. fresh rosemary, 1 tbsp. fresh thyme, 2 tbsp. olive oil, Sea salt and freshly ground black pepper
  • Place the pork in a baking pan and rub it with the herb mixture.
    2 lbs. pork loin
  • Roast in the oven for 30 to 35 minutes.
  • Place the basil, garlic, pine nuts, lemon juice, and olive oil in a blender, or food processor, and blend until smooth; then season to taste with salt.
    2 cups fresh basil leaves, 2 garlic cloves, ¼ cup pine nuts, ½ cup olive oil, 2 tsp. freshly squeezed lemon juice, Sea salt
  • Spread the pesto over the top of the pork and roast for another 12 to 15 minutes.
  • Serve with the remaining pesto sauce.
