In a bowl, combine the olive oil, garlic, rosemary, mint, oregano, and parsley.

Season the lamb chops to taste with sea salt and freshly ground black pepper.
4 to 6 lamb loin chops, Sea salt and freshly ground black pepper
Rub the chops with the garlic and herb mixture; let marinate for 30 to 45 minutes.
Preheat the grill to medium-high heat.
Grill the chops for 4 to 5 minutes per side, or until the desired doneness.
Serve topped with fresh parsley.
