  • In a bowl, combine the olive oil, garlic, rosemary, mint, oregano, and parsley.
    ¼ cup olive oil, 4 garlic cloves, 1 tbsp. fresh rosemary, 1 tbsp. fresh mint, 1 tbsp. fresh oregano, 1 tbsp. fresh parsley
  • Season the lamb chops to taste with sea salt and freshly ground black pepper.
    4 to 6 lamb loin chops, Sea salt and freshly ground black pepper
  • Rub the chops with the garlic and herb mixture; let marinate for 30 to 45 minutes.
  • Preheat the grill to medium-high heat.
  • Grill the chops for 4 to 5 minutes per side, or until the desired doneness.
  • Serve topped with fresh parsley.
