Blueberry Glazed Pork Chops Recipe

Sweet potatoes are a natural, gluten-free side dish for an amazingly spiced plate of blueberry glazed pork chops - salad optional, yet highly recommended.

  • In a small bowl, combine the cayenne pepper, garlic powder, paprika, salt, and pepper.
    ½ tsp. cayenne powder, ½ tsp. garlic powder, ½ tsp. paprika, Sea salt and freshly ground black pepper
  • Season the pork chops with the spice rub.
    4 to 6 pork chops
  • Place blueberries in a medium saucepan over medium-high heat.
    1 cup fresh blueberries
  • Add the fresh garlic, honey, and balsamic vinegar, and season to taste; let simmer for 10 to 12 minutes.
    2 tsp. garlic, 2 tbsp. raw honey, ½ cup balsamic vinegar
  • Mash the blueberries and let the sauce cool.
  • Place the pork chops in a marinating container, and pour the blueberry sauce over the chops making sure they are well covered. Cover and refrigerate 2 to 12 hours.
  • Heat some cooking fat in a skillet over medium-high heat.

  • Remove the pork chops from the marinade, and cook the pork chops for 4 to 5 minutes per side, or to the desired doneness.
