  • Melt coconut oil in a skillet over medium heat.
    ¼ cup coconut oil
  • Add the cauliflower and cook until soft, about 4 to 5 minutes.
    1 head cauliflower
  • Add the garlic and onion; cook another 2 to 3 minutes.
    4 garlic cloves, ½ onion
  • Drizzle the lemon juice, and sprinkle with cinnamon, curry powder, then season to taste.
    2 tbsp. lemon juice, 1 tsp. curry powder, ¼ tsp. ground cinnamon, Sea salt and freshly ground black pepper
  • Stir in the diced tomatoes, and cook until everything is nice and soft, 8 to 10 minutes.
    1 ½ cups diced tomatoes
  • Serve topped with fresh cilantro.
