Keto Mini Cheeseburger Meatloaves Recipe

Most muffins are certainly not Keto, unless you make them yourself, with wholesome ingredients, obviously including bacon. Mini cheeseburger meatloaves, anyone?

  • Preheat oven to 400 F.
  • Combine the ground beef, onion, garlic, egg, cheese, ketchup, oregano, and season to taste.
    1 ½ lbs. ground beef, 1 onion, 2 garlic cloves, 1 egg, ½ cup aged cheddar cheese, ¼ cup homemade ketchup, ½ tbsp. dried oregano, Sea salt and freshly ground black pepper
  • Mix everything until well combined.
  • Take a muffin pan and place a slice of bacon around the sides of each hole.
    12 bacon slices
  • Fill each bacon-surrounded hole with the beef mixture, and shape it into small muffins.
  • Place in the oven and bake for 30 to 35 minutes.
  • Let cool for about 5 minutes before removing from pan, and serve topped with fresh parsley.
    Fresh parsley to garnish
