Melt some cooking fat in a skillet over high heat.

Season the chicken pieces to taste.
3 to 4 lbs. chicken pieces, Sea salt and freshly ground black pepper
Brown the chicken in the skillet on all sides; about 2 minutes per side.
Place the chicken pieces in the slow cooker with the carrots and green onions.

In a bowl, combine the diced tomatoes, tomato sauce, chicken stock, garlic, cumin, paprika, thyme, and season to taste.
4 to 5 Roma tomatoes, ½ cup tomato sauce, ½ cup chicken stock, 3 garlic cloves, ½ tsp. cumin powder, 1 tbsp. paprika, 1 tsp. dried thyme, Sea salt and freshly ground black pepper
Give everything a good stir and pour over the chicken.
Cover and cook on low for 6 to 8 hours.
