African-Style Slow Cooker Chicken Stew Recipe

There is nothing better than coming home to an African-style slow cooker chicken stew at the end of a long day, cauliflower couscous optional.

  • Melt some cooking fat in a skillet over high heat.

  • Season the chicken pieces to taste.
    3 to 4 lbs. chicken pieces, Sea salt and freshly ground black pepper
  • Brown the chicken in the skillet on all sides; about 2 minutes per side.
  • Place the chicken pieces in the slow cooker with the carrots and green onions.

  • In a bowl, combine the diced tomatoes, tomato sauce, chicken stock, garlic, cumin, paprika, thyme, and season to taste.
    4 to 5 Roma tomatoes, ½ cup tomato sauce, ½ cup chicken stock, 3 garlic cloves, ½ tsp. cumin powder, 1 tbsp. paprika, 1 tsp. dried thyme, Sea salt and freshly ground black pepper
  • Give everything a good stir and pour over the chicken.
  • Cover and cook on low for 6 to 8 hours.
