  • Melt cooking fat in a skillet over high heat. Brown the beef cubes on all sides; about 1 minute per side.
    Cooking fat, 3 ½ lb. beef stew meat
  • Add the remaining ingredients to a slow cooker, top with the browned beef, season, and cover.
    2 cups pearl onion, 2 sweet potatoes, 2 celery stalks, 4 garlic cloves, 2 cups beef stock, 2 tbsp. tomato paste, 2 cups carrot, 2 bay leaf, 1 tsp. thyme, Sea salt and freshly ground black pepper
  • Cook on low for 6 to 8 hours.
  • Let the stew rest for 10 to 15 minutes before serving.
