Shrimp Taco Cucumber Bites Recipe

Bite size Mexican dishes don't always have to include nachos. This Paleo twist combines seafood and guacamole atop cucumber slices.

  • In a bowl, mash the avocado until smooth. Add all the remaining ingredients for the guacamole. Stir until well combined, cover, and refrigerate.
    1 ripe avocado, 1 tbsp. fresh cilantro, 1 tbsp. fresh lime juice, 1 garlic clove, ¼ cup Roma tomatoes, ¼ cup red onion
  • Preheat the grill to medium-high heat.
  • Place the shrimp in a bowl and toss with the olive oil, chili powder, paprika, cumin, onion powder, garlic powder, oregano, salt, and pepper.
    1 lb shrimp, 1 tbsp. chili powder, ½ tbsp. paprika, 2 tsp. ground cumin, ½ tsp. onion powder, ½ tsp. garlic powder, ½ tsp. dried oregano, 2 tbsp. olive oil, Sea salt and freshly ground black pepper;
  • Grill the shrimp until cooked through, about 3 to 4 minutes per side.

  • Top each cucumber slice with guacamole and shrimp.
