  • Combine all ingredients for the mayonnaise in a bowl and stir until well blended.
    1 garlic clove, Sea salt and freshly ground black pepper, ½ cup homemade mayonnaise;, 1 tbsp. Dijon mustard, 2 tbsp. fresh lemon juice, ¼ cup onion, 2 tsp. fresh dill
  • Place the sauce in the refrigerator until ready to serve.
  • In a bowl, combine the ground chicken, onion, sun-dried tomatoes, spinach, garlic, oregano, almond meal, and egg; season with salt and pepper to taste.
    1 ½ to 2 lb. ground chicken or turkey, ¼ cup red onion, ¼ cup sun-dried tomatoes, 2 oz. fresh spinach, 1 tsp. dried oregano, ½ cup almond meal, 1 garlic clove, Sea salt and freshly ground black pepper, 1 egg
  • Form the chicken mixture into evenly sized patties.
  • Melt cooking fat in a skillet over high heat and add the patties to the skillet.
  • Cook the patties 5 to 6 minutes per side or until no longer pink.
  • Serve the patties topped with the mayonnaise and your favorite toppings.
