Mojo Marinated Cuban-Style Pork Recipe

This amazing twist on pork tenderloin is inspired by the Mojito, giving a citrus-mint flavor unlike any other.

  • Combine the olive oil, garlic, orange zest, orange juice, cilantro, mint, oregano, and cumin; season to taste with salt and pepper.
    8 garlic cloves, 2 tbsp. orange zest, ½ cup olive oil, ½ cup fresh orange juice, ½ cup cilantro, ¼ cup mint leaves, 2 tsp. dried oregano, 2 tsp. ground cumin, Sea salt and freshly ground black pepper
  • Place the pork in a marinating container and pour the marinade on top.
    2 pork tenderloins
  • Marinate in the refrigerator for 2 to 12 hours.
  • Pour marinade into a saucepan and boil for at least 2 minutes; set aside.
  • Preheat the grill to medium-high heat.
  • Remove pork from the marinade and let sit at room temperature.
  • Grill the pork for 5 minutes per side, brushing with the remaining marinade after turning.
  • Once cooked to desired doneness, let rest for 4 to 5 minutes before carving.
