  • Preheat grill to medium-high.
  • Combine the turkey, almond flour, olives, green onion, garlic, fresh parsley, oregano, egg, and lemon juice. Season to taste with salt and pepper.
    1 lb. ground turkey, ¼ cup almond flour, ½ cup Kalamata olives, 2 green onions, 2 tbsp. fresh lemon juice, 2 garlic cloves, 2 tbsp. fresh parsley, 1 tbsp. fresh oregano, 1 large egg, Sea salt and freshly ground black pepper
  • Mix everything until well combined, and form the mixture into equal size meatballs (about the size of a ping pong ball).
  • Thread the meatballs and roughly chopped bell pepper, alternating meat/vegetables on skewers.
    2 bell peppers, Wood or metal skewers
  • Cook the meatballs skewers for 3 to 4 minutes per side or until the meatballs are cooked through.
