Preheat oven to 425 F.
Toss the potatoes on a baking sheet with olive oil, lime juice, chili powder, and cumin; season to taste with salt and pepper.

Place in the oven and roast the sweet potatoes for 15 to 20 minutes.
Melt cooking fat in a skillet over medium heat.

Cook the onion and garlic for 1 to 2 minutes or until soft.

Add the ground beef and cook until no longer pink, about 6 minutes.

Add the bell pepper and cook until soft (3 to 4 minutes).

Add cumin, paprika, chili powder, and oregano; season to taste with salt and pepper; toss everything until well mixed.

Serve the ground beef mixed with the sweet potatoes; top with green onions and drizzle with cilantro sauce.
