If making the BBQ sauce, melt the cooking fat over medium heat in a saucepan. Add the onion and garlic and cook until soft.
1 tsp. onion powder, 1 cup homemade BBQ sauce, Cooking fat, 1 tsp. garlic powder
Add all the remaining ingredients for the sauce and cook for 12 to 15 minutes. Pulse until smooth using an immersion blender.
1 tsp. chili powder, 1 cup homemade ketchup, ½ cup fresh apple juice, ⅓ cup maple syrup or raw honey, ¼ cup apple cider vinegar, 1 onion, 2 garlic cloves, ½ tbsp. paprika powder, Cooking fat, Sea salt and freshly ground black pepper
For the skewers: in a bowl combine the chicken, paprika, chili powder, onion powder, garlic powder, dried oregano. Season to taste and toss until chicken is well coated.
4 chicken breasts, 1 tsp. paprika, 1 tsp. onion powder, 1 tsp. garlic powder, ½ tsp. dried oregano, 1 tbsp. chili powder, Sea salt and freshly ground black pepper, 2 tbsp. olive oil
Thread the cubed chicken onto the skewers.
Wooden or metal skewers
Generously brush the skewers with the BBQ sauce, if using.
Preheat grill to medium-high heat.
Grill the chicken skewers 8 to 10 minutes, rotating every 2 to 3 minutes and brushing with bbq sauce every time.
Serve the skewers with extra BBQ sauce for dipping.
