  • Heat coconut oil in a skillet over high heat; add the onion and the ground beef.
    ½ onion, 2 tbsp. coconut oil, 1 lb. ground beef
  • Cook until the beef is browned, sprinkle with the taco seasoning, and cook, stirring until well mixed.

  • In a bowl, combine all the ingredients for the vinaigrette and whisk until well emulsified.
    Sea salt and freshly ground black pepper, ½ cup olive oil, 3 tbsp. fresh lime juice, 1 garlic clove, ¼ cup fresh cilantro, ¼ tsp. chili powder
  • In a salad bowl, toss together the lettuce, tomatoes, bell pepper, avocado, green onion, and ground beef.
    4 to 5 cups romaine lettuce, 1 cup grape tomatoes, 1 avocado, 1 bell pepper, 1 green onion, 1 lb. ground beef
  • Drizzle with the vinaigrette, give everything another toss, and serve.
