  • Preheat oven to 375 F.
  • Season the pork to taste with sea salt and freshly ground black pepper; set aside in a baking dish.

  • Add the blueberries, balsamic vinegar, water, ginger, chili flakes, salt, and black pepper, to a saucepan.
    1 cup fresh blueberries, 1 tbsp. balsamic vinegar, 1 tsp. ground ginger, ½ tsp. chili flakes, 2 tbsp. water, Sea salt and freshly ground black pepper
  • Cook over medium heat for 4 to 5 minutes or until the blueberries release most of their juice.
  • Pour the blueberry sauce over the pork loin.
  • Place in the oven and roast for 20 to 25 minutes.
  • Let the pork rest for 5 minutes before serving.
    ½ tsp. dried thyme
