Place the bacon in a warm skillet over medium-high heat.
4 strips of thick-cut bacon
Fry until nicely crisp, about 3 to 4 minutes. Set aside, let it cool, and then roughly chop the bacon.
Melt ghee in the same skillet and add the garlic and onion.
2 garlic cloves, 2 tbsp. ghee, ½ onion
Cook until soft for 1 to 2 minutes, and add halved Brussels sprouts.
1 pound Brussels sprouts
Stir everything while cooking until Brussels sprouts are nicely browned, 8 to 10 minutes.
Season the sprouts to taste, add the bacon back to the skillet, and give everything a nice stir.
Sea salt and freshly ground black pepper
Cook another minute or two and serve immediately.
