  • In a small bowl, combine and whisk together the olive oil, lime juice, lime zest, chili powder, cumin, garlic, salt, and pepper to taste.
    4 tbsp. olive oil, Zest and juice of 1 lime, 1 tbsp. chili powder, 2 tsp. ground cumin, 2 garlic cloves, Sea salt and freshly ground black pepper
  • Place the chicken in a large bowl. Pour the chili-lime sauce over the chicken and allow it to marinate for 25 to 30 minutes.
    1 lb. chicken breasts
  • Thread the cubed chicken, bell pepper, and red onion onto the skewers.
    2 bell peppers, 1 red onion, Wooden or metal skewers
  • Preheat the grill to medium-high.
  • Place the skewers on the grill and cook covered for 12 to 15 minutes, turning the skewers every 4 minutes or so.
  • Garnished the chicken fajita skewers with minced cilantro and fresh homemade salsa.
