In a small bowl, combine and whisk together the olive oil, lime juice, lime zest, chili powder, cumin, garlic, salt, and pepper to taste.

Place the chicken in a large bowl. Pour the chili-lime sauce over the chicken and allow it to marinate for 25 to 30 minutes.

Thread the cubed chicken, bell pepper, and red onion onto the skewers.

Preheat the grill to medium-high.
Place the skewers on the grill and cook covered for 12 to 15 minutes, turning the skewers every 4 minutes or so.
