  • Combine all the ingredients except the beef in a bowl. Give everything a good stir, and season to taste.
    3 garlic cloves, 1 tbsp. fresh lemon zest, 1 tbsp. fresh parsley, 2 tsp. fresh thyme, 2 tsp. fresh rosemary, 2 tsp. dried oregano, 4 tbsp. olive oil, 2 tbsp. fresh lemon juice, Sea salt and freshly ground black pepper
  • Add the beef to the herb mixture and let marinate for at least 15 to 20 minutes and up to overnight in the refrigerator.

  • Preheat your grill to medium-high.
  • Remove the meat from the marinade, and slide it onto wood or metal skewers.

  • Cook on the grill for 6 to 8 minutes, turning every 2 minutes.
  • Remove from the heat, and let rest for 5 minutes before serving.
