Preheat your oven to 400 F.
In a bowl, combine the sweet potatoes, olive oil, and chili powder, and season with salt and pepper to taste.
2 sweet potatoes, 2 tbsp. olive oil, 2 tsp. chili powder, Sea salt and freshly ground black pepper
Spread in an even layer on a baking sheet.
Bake in the oven for 30 to 35 minutes.
In a bowl, combine all the ingredients for the dressing and mix well.
¼ cup homemade BBQ sauce, 2 tbsp. mayonnaise, 1 tbsp. white wine vinegar, 3 tbsp. olive oil
In a salad bowl, combine the chopped lettuce, tomatoes, sweet potatoes, cucumber, bacon, and chicken.
5 bacon slices, 3 romaine lettuce heads, 1 cup cherry tomatoes, 3 cups cooked chicken, 1 cucumber
Drizzle the BBQ dressing over the salad and toss gently.
