Preheat your grill to medium-high.
Place the bacon, paprika, and smoked paprika in a food processor, and pulse until you get a smooth paste.
1 ½ tsp. paprika, 2 to 3 raw bacon slices, 2 tsp. smoked paprika
In a bowl, combine the chicken cubes with the bacon paste and mix until well coated.
2 lbs. chicken breasts, 2 to 3 raw bacon slices
Grill the chicken over your preheated grill, turning every 2 to 3 minutes, until browned, about 8 to 10 minutes total.
Brush the kebabs with BBQ sauce and cook another minute on all sides; remove and set aside.
1 cup homemade BBQ sauce
In a bowl, combine the apple juice, vinegar, oil, and season with salt and pepper to taste.
2 apples, 4 tbsp. apple cider vinegar, ¼ cup oil, Sea salt and freshly ground black pepper
Toss the mixed greens, apple slices, cranberries, and walnuts in a salad bowl.
6 cups mixed greens, ⅓ cup dried cranberries, 1 cup. apple juice, 1 cup. walnuts
Drizzle the dressing over the salad, and serve with the chicken kebabs.
