  • In a bowl, combine the grapefruit juice, white wine vinegar, olive oil, shallot, chives, and salt and pepper to taste. Whisk together until smooth.
    1 grapefruit, 1 shallot, 1 tbsp. fresh chives, 4 tbsp. extra-virgin olive oil, 2 tbsp. white wine vinegar, Sea salt and freshly ground black pepper
  • Add the lobster meat to the dressing, and toss gently until well coated.

  • In a salad bowl, combine the mixed greens, avocado, and grapefruit, and toss gently.
    1 avocado, 2 to 3 cups mixed greens, 2 tsp. fresh grapefruit juice
  • Plate the salad and top it with the lobster, dressing, and fresh dill.
