In a saucepan, sauté the onion, garlic, and ginger in melted cooking fat over medium-high heat.

Cook until fragrant, add all the remaining ingredients for the BBQ sauce, and season to taste.

Bring the sauce to a boil, lower the heat, and let simmer for 25 to 30 minutes.
Preheat your grill to medium-high.
Season the pork to taste with sea salt and freshly ground pepper.

Grill the pork chops for 4 to 5 minutes per side.
Baste the pork chops with peach BBQ sauce and cook for another minute on each side.
Serve the pork chops with fresh thyme and extra BBQ sauce.
