Keto Creamy Mashed Cauliflower Recipe

There is a time and a place for keto creamy mashed cauliflower - that time is now. Add ghee and herbs, and folks won't even realize it is potato-free!

  • Bring water to a boil in a saucepan over medium-high heat.
  • Add the cauliflower and cook for 15 to 20 minutes, or until fork tender.
    4 to 5 cups cauliflower
  • Strain the cauliflower and return it to the saucepan.
  • Add the ghee, garlic, chives, rosemary, parmesan, and season to taste.
    ¼ cup ghee, 4 garlic cloves, 1 tbsp. fresh chives, 2 tsp. fresh rosemary, ¼ cup freshly grated Parmesan, Sea salt and freshly ground black pepper
  • Mash the cauliflower using a potato masher or fork until smooth.
  • Serve topped with fresh parsley.
