cauliflower
roughly chopped

ghee
melted

garlic cloves
minced

tbsp.
fresh chives
minced

tsp.
fresh rosemary
minced

fresh parsley

freshly grated Parmesan
Sea salt and freshly ground black pepper
Instructions
Bring water to a boil in a saucepan over medium-high heat.
Add the cauliflower and cook for 15 to 20 minutes, or until fork tender.
4 to 5 cups cauliflower
Strain the cauliflower and return it to the saucepan.
Add the ghee, garlic, chives, rosemary, parmesan, and season to taste.

¼ cup freshly grated Parmesan,
Sea salt and freshly ground black pepper
Mash the cauliflower using a potato masher or fork until smooth.
Serve topped with fresh parsley.
