Combine the green cabbage, red cabbage, carrot, green onion, bell pepper, and apple in a large bowl.
2 cups green cabbage, 1 cup red cabbage, ½ cup shredded carrot, 1 red apple, 2 green onions, ½ cup orange bell pepper, 1 Granny Smith apple
In another bowl, whisk together the mayonnaise, olive oil, vinegar, lemon juice, and poppy seeds, and season with salt and pepper to taste.
¼ cup homemade mayonnaise, 3 tbsp. olive oil, 1 tbsp. apple cider vinegar, Juice of ½ lemon, 1 tbsp. poppy seeds, Sea salt and freshly ground black pepper
Pour the dressing over the cabbage mixture and stir until well combined.
Refrigerate for at least one hour and serve cold.
