Ingredients

  • 24 ounces spinach or baby spinach
  • 1 onion finely diced
  • 3 garlic cloves finely minced
  • 2 cups full-fat coconut milk
  • 1 pinch of ground nutmeg
  • 1 pinch cayenne pepper or to taste optional
  • 2 tbsp. tapioca starch
  • 3 tbsp. ghee clarified butter
  • Sea salt and freshly ground black pepper to taste

Instructions

  • Melt the ghee in a pot over medium heat.

  • Slowly whisk in the tapioca starch and cook for about 5 minutes.

  • Add the onion and garlic and cook for another minute.

  • Throw in all the spinach and cook until softened.
    24 ounces spinach or baby spinach
  • Add the coconut milk, nutmeg, and cayenne pepper (if using). Give everything a good stir and cook for another 5 minutes. (If the sauce is not creamy enough, mix in an additional 1 tbsp. of tapioca starch in a separate bowl with a little coconut milk, and slowly add it to the cooking mixture.)
    2 cups full-fat coconut milk, 1 pinch of ground nutmeg, 1 pinch cayenne pepper or to taste
  • Season to taste with salt and pepper and serve.
    Sea salt and freshly ground black pepper to taste
