Ingredients

  • 2 lb. boneless pork loin or rib chops
  • 2 tbsp. grated lime peel
  • 1 tbsp. cumin seed
  • 1 tbsp. freshly cracked black pepper
  • 2 tbsp. extra-virgin olive oil
  • 2 cloves garlic minced

Instructions

  • Preheat your grill to medium-high heat.
  • In a small bowl, combine the grated lime, cumin, garlic, black pepper, olive oil, and sea salt to taste.

  • Rub the Cuban marinade evenly on both sides of the pork chops.

  • Grill the chops for 6 to 8 minutes, turning every few minutes, until cooked through.

Mango Side Preparation

  • Add some cooking fat to a skillet placed over medium heat.

  • Add the garlic to the skillet and cook until it starts to brown.

  • Add the mango, the lime juice, and the honey, and season to taste. Cook for 4 to 5 minutes.
    1 large mango, Juice from 1 lime, 1 tbsp. raw honey
  • Serve the pork chops with the mango on the side.
