Break the eggs into a medium bowl and beat until broken. Season to taste with sea salt and black pepper.

Over medium-low heat, preheat your cooking fat in a 10-inch frying pan.

Make sure the pan is evenly coated with the fat, and pour in the eggs.
Sprinkle with 1 tablespoon of the chives and the tarragon, and let sit for about 1 to 2 minutes.
1 tbsp. and 1 tsp. of fresh chives, 1 tbsp. fresh tarragon
Using a rubber spatula, push the eggs from the edges to the center and let them sit. Repeat every 30 seconds until the eggs are cooked (approximately 5 minutes).
Remove the eggs from the heat and divide them into four equal portions.
Take the four slices of apple, top each slice with smoked salmon, and then with a quarter of the eggs.
4 medium slices of smoked salmon, 1 or 2 big granny smith apples
Garnish with the remaining chives and serve.
