Mint Zucchini Recipe

- 2 large zucchinis cut into thick slices
- 1 tbsp. extra-virgin olive oil
- 1 garlic clove minced
- Juice of half a lemon
- 4 leaves fresh mint minced
- Sea salt and freshly ground black pepper to taste
Add the zucchinis and olive oil to a frying pan placed over medium-high heat and cook for 2-3 minutes until the zucchini is golden brown.
2 large zucchinis, 1 tbsp. extra-virgin olive oil
Add the garlic, and the lemon juice and season with sea salt and black pepper to taste, and cook for another 2 min.

Add the fresh mint and cook for another minute or two. Serve while hot.
