Ingredients

  • 2 large zucchinis cut into thick slices
  • 1 tbsp. extra-virgin olive oil
  • 1 garlic clove minced
  • Juice of half a lemon
  • 4 leaves fresh mint minced
  • Sea salt and freshly ground black pepper to taste

Instructions

  • Add the zucchinis and olive oil to a frying pan placed over medium-high heat and cook for 2-3 minutes until the zucchini is golden brown.

  • Add the garlic, and the lemon juice and season with sea salt and black pepper to taste, and cook for another 2 min.
    1 garlic clove, Juice of half a lemon, Sea salt and freshly ground black pepper to taste
  • Add the fresh mint and cook for another minute or two. Serve while hot.
    4 leaves fresh mint
