Stuffed Bell Peppers with Tomato Sauce

For Tomato Sauce

Instructions

  • Preheat your oven to 350 F.
  • Place the bell peppers in a pot of salted boiling water for about 4 minutes. Drain.

  • In a bowl, combine the ground beef, onion, garlic, egg, almond flour, oregano, basil and season to taste with sea salt and freshly ground black pepper.
    1 lb ground beef, ½ cup onion, 1 tablespoon garlic, 1 egg, ½ cup almond flour, ½ teaspoon dried oregano, ¼ teaspoon dried basil, Sea salt and freshly ground black pepper
  • Fill the bell peppers with the ground meat mixture.
  • In a bowl, prepare the sauce by mixing together the tomato sauce, water, vinegar, mustard, oregano, basil and garlic powder. Season with salt and pepper to taste.
    1 cup canned tomato sauce, ¼ cup water, 1 tablespoon balsamic vinegar, 1 teaspoon Dijon mustard, ¼ teaspoon dried oregano, ¼ teaspoon dried basil, ¼ teaspoon garlic powder
  • Spread a layer of tomato sauce in a baking dish, then place the stuffed peppers on top and cover them with the remaining of the sauce.
  • Place in the oven to cook for 50 to 60 minutes

Notes

  • Replace the ground beef with ground pork, ground bison, or ground veal if you prefer. 
  • You can use a Paleo approved basic marinara sauce with this instead of making your own.
