Ingredients

  • 4 bone-in pork chops with the trimmings
  • 3 tablespoon cooking fat beef tallow, bacon grease, or lard
  • 2 large onions sliced
  • 4 apples sliced and cored
  • Salt and black pepper to taste

Instructions

  • Heat a large pan over medium-high heat. Season the pork chops with salt and pepper to taste.

  • Melt 2 tablespoon of the cooking fat and fry the chops for about 5 minutes on each side, until well cooked and browned.

  • Set the pork chops aside, and reduce the heat to medium-low, add the other tablespoon of cooking fat and add the onion and apple slices.

  • Cook for about 4 minutes, until the onions are slightly soft and the apple slices have caramelized.

  • Serve the chops with the topping of apples and onions

Notes

  • Season the pork chops with salt, pepper, or any other blend of spices you prefer.  This pairs well with a bit of garlic powder, onion powder, and paprika, or a simple season salt blend if you prefer. 
  • Serve with a paleo cauliflower or potato side for contrast. 
  • Pork should be cooked to an internal temperature of 145°F for safety.
