Heat a large pan over medium-high heat. Season the pork chops with salt and pepper to taste.

Melt 2 tablespoon of the cooking fat and fry the chops for about 5 minutes on each side, until well cooked and browned.

Set the pork chops aside, and reduce the heat to medium-low, add the other tablespoon of cooking fat and add the onion and apple slices.

Cook for about 4 minutes, until the onions are slightly soft and the apple slices have caramelized.

Serve the chops with the topping of apples and onions
Notes
Season the pork chops with salt, pepper, or any other blend of spices you prefer. This pairs well with a bit of garlic powder, onion powder, and paprika, or a simple season salt blend if you prefer.
Serve with a paleo cauliflower or potato side for contrast.
Pork should be cooked to an internal temperature of 145°F for safety.
