Slow Cooker Beef Sweet Potato Stew

  • Season beef with salt and pepper. Brown beef in a skillet over medium heat for 2-3 minutes on each side.
    1 lb beef chuck roast, Salt and black pepper, 4 tablespoon cooking fat
  • In a crock pot, combine browned beef, sweet potatoes, garlic, cinnamon stick, onion, tomatoes, bay leaf, and allspice. Cook on low for 8 hours until beef is tender.
    3 cups sweet potatoes, 2 garlic cloves, ⅛ teaspoon allspice, 1 cinnamon stick, 1 large onion, 28 oz tomatoes, 1 bay leaf
  • Optional: Add dried apricots during the last 20 minutes of cooking. Cook on low for another 20 minutes until apricots are soft.
    8 dried apricots
  • Remove bay leaf and cinnamon stick. Garnish with parsley before serving.

Notes

  • Ask your butcher to cut a chuck roast into cubes for you instead of using stew meat that may not be as good quality. 
  • If desired, you may add other vegetables to the stew.
