Bacon Wrapped Scallops

Ingredients

  • 24 sea scallops
  • 12 slices bacon
  • Freshly ground black pepper to taste
  • Zest of 2 lemons

Instructions

  • Preheat your oven broiler.
  • Heat a frying pan and slightly cook the bacon so it’s still quite soft and flexible.
    12 slices bacon
  • Remove the bacon from the heat, pat it dry and cut each slice in half crosswise.
  • Wrap each bacon half around a scallop, secure it with a toothpick and season to taste with freshly ground black pepper.
    24 sea scallops, Freshly ground black pepper to taste
  • Place the wrapped scallops on a rack set over a pan or rimmed baking sheet and place at about 5 inches under the preheated broiler for about 10 minutes, until cooked through, turning them often to cook everything evenly.
  • Place the appetizers in a serving plate and sprinkle the lemon zest on top.
