Kale, Beet And Apple Salad Recipe
As if you needed another reason to eat kale! Add it to your apple and beet salad, along with a side of roasted chicken or hard boiled eggs.

Salad Ingredients
- 6 cups curly kale roughly chopped into bite-sized pieces
- 1 apple diced
- 1 cucumber diced
- 2 beets boiled and chopped
- ¼ cup pepitas or sunflower seeds optional
- 1 tablespoon olive oil
Lemon Dressing Ingredients
In a small bowl whisk together ingredients for the dressing until well emulsified. Season to taste.
¼ cup olive oil, 2 tablespoon red wine vinegar, 1 clove garlic, 1 teaspoon honey, Sea salt and freshly ground black pepper, 2 tablespoon lemon juice
Place kale in large bowl and drizzle with 1 tablespoon of olive oil.

Lightly scrunch kale with hands to massage and soften the leaves.
Add in remaining salad ingredients and mix.
1 apple, 1 cucumber, 2 beets, ¼ cup pepitas or sunflower seeds, 1 tablespoon olive oil
Drizzle dressing over salad and toss gently.
Serve immediately or let the salad sit for 10 minutes to meld the flavors.
