Preheat oven to 375 F.
Season the chicken to taste with salt, pepper, and half of the Italian seasoning.
1 lb. chicken breast, 2 tsp. dried Italian seasoning, Sea salt and freshly ground black pepper
Place the chicken on a lightly greased baking sheet or pan.
In a bowl, combine all the vegetables and dried cranberries, drizzle with the olive oil, season to taste, and sprinkle the remaining Italian seasoning. Toss until well coated.
2 cups broccoli, 1 sweet potato, 1 rutabaga, 1 red onion, 2 tbsp. dried cranberries, ¼ cup olive oil, 2 garlic cloves
Add the vegetables around the chicken and place in the oven.
Bake for 40 to 45 minutes, or until the chicken is cooked through and the vegetables are tender.
