Preheat oven to 400 F.
Combine all the vegetables in a bowl, add the oil and seasonings, then mix well.
2 cups mushrooms, 2 cups cherry tomatoes, 1 bell pepper, 1 cup green beans, 2 large zucchinis, 1 tsp. dried rosemary, ½ tsp. black pepper, 2-3 tbsp. olive oil, 1 tsp. salt
Transfer to a roasting tray and place in the oven.
Allow roasting for 30-45 minutes until the vegetables are cooked and starting to caramelize.
For the steak, combine the oil, lime juice, garlic, and seasoning in a small bowl, then pour over the steak.
Juice of 2 limes, 4 garlic cloves, Sea salt and pepper, 2 tbsp. olive oil
Allow the steak to marinate for 10 minutes, then cook on a hot griddle until done to your preference. Allow the steak to rest for a few minutes.
4 10 oz. steaks
Serve immediately with the roasted vegetables.
