Blueberry Chocolate Chia Parfait Recipe

Ingredients

  • 2 cups fresh blueberries
  • ½ cup water
  • 3 tbsp. chia seeds
  • Fresh blueberries to serve

Chocolate Avocado Mousse Ingredients

  • 2 bananas
  • 1 ripe avocado
  • ¾ cup cocoa powder
  • ½ cup espresso
  • ½ cup melted dark chocolate
  • Pinch of salt

Instructions

  • For the chia jam - cook the blueberries and water over medium heat until the berries burst open.
    2 cups fresh blueberries, ½ cup water
  • Add the chia seeds and reduce the heat. Cook for 7-10 minutes until the jam is thick and the chia seeds are soft.

  • Remove from heat and cool.
  • To make the mousse, combine all the ingredients in the bowl of a food processor and blend until smooth, scraping down the sides as needed.

  • To make the parfait, layer the chia jam and chocolate mousse in serving glasses, then top with fresh blueberries and place in the fridge to set for at least 30 minutes.
