  • Preheat oven to 400 F.
  • In a bowl, combine the olive oil, lemon juice, chili sauce, Cajun seasoning, and ground cumin, and season to taste with salt and pepper.
    4 tbsp. olive oil, 2 tbsp. fresh lemon juice, 1 tbsp. Cajun seasoning, 1 tbsp. ground cumin, Sea salt and freshly ground black pepper, ¾ cup homemade chili sauce
  • Mix the Cajun sauce with the chicken and the sweet potatoes, and toss until well-coated.
    2 chicken breasts, 2 sweet potatoes
  • Grease a baking sheet and arrange chicken and potatoes in a single layer. Bake for 15 minutes.
  • After 15 minutes, add the zucchini and bell pepper to the chicken and give everything a good toss.
    1-2 zucchinis, 1 bell pepper
  • Place back in the oven, and bake another 15 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  • Season to taste and serve.
