Combine all the ingredients for the dressing in a bowl, season to taste with salt and pepper, and whisk until well mixed.
½ cup coconut milk, ¼ cup pomegranate juice, 2 tbsp. apple cider vinegar, 1 tsp. lemon zest, 2 tsp. raw honey, Sea salt and freshly ground black pepper
Place the mixed greens in a salad bowl and add the grapefruit, strawberries, and watermelon.
1 grapefruit or 2 blood oranges, 4 to 5 cups mixed greens, ½ cup strawberries, 2 cups watermelon
Drizzle the salad with the dressing and top with walnuts.
