  • Preheat the oven to 400 F.
  • In a bowl, combine the ghee, garlic, honey, balsamic vinegar, salt, and pepper, and season to taste.
    2 tbsp. ghee, 2 garlic cloves, 2 tbsp. balsamic vinegar, 1 tbsp. raw honey, Sea salt and freshly ground black pepper
  • Mix in the carrots and toss until well coated.
    1-½ lb. young carrots
  • Place in the oven and roast for 25 to 30 minutes.
  • Serve topped with fresh parsley.
