Preheat the grill to medium-high heat.
Place the sweet potatoes in a bowl with 4 tablespoons of olive oil, season to taste, and toss until coated.
4 to 6 sweet potatoes, ¼ cup olive oil + 4 tbsp. olive oil for cooking, Sea salt and freshly ground black pepper
In a small bowl, combine the parsley, lemon zest, lemon juice, garlic, and olive oil; whisk until combined.
¼ cup fresh parsley, 1 tsp. lemon zest, 2 tbsp. fresh lemon juice, 2 garlic cloves minced, ¼ cup olive oil + 4 tbsp. olive oil for cooking
Place the sweet potatoes on the grill and cook for 4 to 5 minutes per side.
Place the grilled potatoes back in the bowl and toss with the lemon dressing until well coated.
