  • Melt the cooking fat in a large skillet over medium-high heat.

  • Season the pork chops to taste on both sides.

  • Place the pork chops in the skillet and cook for 8 to 10 minutes, turning every minute or so.

  • Remove the skillet from the heat and add the garlic, ghee, and sage.
    4 garlic cloves, 4 tbsp. ghee, 8 sprigs sage
  • Let the butter melt in the skillet, and mix it around with the garlic and sage.
  • Let the skillet sit for 3-4 minutes, basting the pork chops frequently with the butter-garlic-sage mixture.
