Mint and Watermelon Salad Recipe

Cool off with this refreshing watermelon and mint salad. It tastes more like a dessert than a side dish, but can be served as either one!

Ingredients

  • 1 watermelon
  • 2 tbsp. light olive or avocado oil
  • 1 tbsp. lime zest
  • 2 tbsp. lime juice
  • ¼ cup mint minced

Instructions

  • Scoop the watermelon using a melon baller. Form into round balls, or cut into cubes using a knife.

  • In a small bowl, whisk together the olive or avocado oil, lime zest, lime juice, and mint.

  • Pour the lime juice mixture over the watermelon, and toss until well coated.
  • Refrigerate and serve cold.
