Preheat your grill to medium-high.
Sauté the bacon in a skillet until crisp. Remove and crumble when cool enough to handle.

Add the onion and garlic to the skillet and cook over medium-high heat until soft and golden.

Add the apples, and cook for 4 to 5 minutes.

Add the honey and vinegar and reduce the heat.

Sprinkle with the ground cinnamon, and fresh thyme, and season with salt and pepper to taste.

Cook the pork chops on the grill for 5 to 7 minutes per side.
4 to 6 big pork chops
Serve the pork chops with the apple-bacon relish.
