  • Preheat your grill to medium-high.
  • Sauté the bacon in a skillet until crisp. Remove and crumble when cool enough to handle.
    8 bacon slices
  • Add the onion and garlic to the skillet and cook over medium-high heat until soft and golden.
    1 cup red onions, 1 tbsp. garlic, Sea salt and freshly ground black pepper
  • Add the apples, and cook for 4 to 5 minutes.

  • Add the honey and vinegar and reduce the heat.
    2 tbsp. raw honey, 2 tablespoons apple cider vinegar
  • Sprinkle with the ground cinnamon, and fresh thyme, and season with salt and pepper to taste.

  • Cook the pork chops on the grill for 5 to 7 minutes per side.
    4 to 6 big pork chops
  • Serve the pork chops with the apple-bacon relish.
