Melt some cooking fat in a skillet over medium-high heat.

Season the chicken breasts to taste. Brown on both sides, 2 to 3 minutes per side, and set aside.

Add onion and garlic to the skillet and sauté until fragrant.

Pour in the balsamic vinegar and cook, constantly stirring, until reduced by half.

Stir in the peas and tomatoes.
2 to 3 pears, 2 cups diced tomatoes
Return the chicken to the skillet. Lower heat to medium, cover, and cook until chicken is cooked through (about 8 to 10 minutes).
Top with fresh basil to serve.
