Apple Pie Muffins Recipe
All you want for breakfast is a simple muffin, and a Paleo apple pie muffin at that, complete with applesauce, cinnamon, sliced almonds.

Preheat oven to 375 F.
Combine all the ingredients (except the almonds) with half the sliced apples in a bowl, and mix until everything is well combined.
½ cup coconut flour, 1 ½ cups apples, 1 tsp. baking soda, 2 tsp. ground cinnamon, 4 eggs, 1 cup homemade applesauce, 2 tsp. vanilla extract, 2 tbsp. ghee, ¼ cup sliced almonds
Evenly scoop the mixture into a muffin pan.
Top each muffin with the remaining sliced apples, and sprinkle with the almonds.

Bake in the preheated oven for 20 to 25 minutes or until firm to the touch and a toothpick inserted in the middle comes out clean.
