Mason Jar Chicken Salad Recipe
You can never go wrong with a Mason jar salad! Dressing on the bottom, cooked chicken and veggies next, topped off with a simple vinaigrette dressing.

Herby Vinaigrette Ingredients
Mix together all the dressing ingredients and pour into two large mason jars.
2 cups cooked chicken, 3 tablespoon olive oil, 2 tablespoon lemon juice, Small handful of finely chopped parsley, Salt & pepper to taste
Add the chicken, then layer the baby spinach, tomatoes, cucumber, radish, green onion, and olives between the jars.
2 handfuls of baby spinach, ½ cup green onions, ½-1 cup cherry tomatoes, ½ cup radishes, 1 cucumber, 1 cup olives
Close tightly with a fitting lid and keep in the fridge for up to 2 days before serving.
