  • Combine the olive oil, chopped cilantro, garlic, lime juice, and salt and pour over the chicken. Allow marinating for 5-10 minutes.
    3 tbsp. olive oil, 4 tbsp. chopped cilantro, 3 garlic cloves, 3 tbsp. lime juice, 1 tsp. salt
  • Cook the chicken in a hot pan until cooked through, about 5-7 minutes on each side. Remove from heat and allow to rest for 5 minutes.

  • To make the salsa, combine all of the ingredients and mix well.
    1 cup cherry tomatoes, 1 avocado, 1 red onion, 1 jalapeño, Small handful of cilantro leaves, 1 tbsp. olive oil, 1-2 tbsp. lime juice, Salt to taste
  • Serve the cooked chicken with the avocado salsa.
